Quinoa Cakes

My husband introduced me to quinoa. Honestly, I wasn't a huge fan of it. At least how he liked to eat it. But I found a new recipe and I love it.

2 cups cooked quinoa
2/3 cup grated Parmesan cheese
2 Tbsp flour
2 green onions, thinly sliced
2 garlic cloves, minced
1 egg, lightly beaten
1/4 cup panko crumbs
1/2 tsp black pepper
Dash of cayenne pepper
salt to taste
3 Tbsp extra virgin olive oil

In a bowl combine all of the ingredients except for the olive oil. Allow to sit for about 5 minutes.

Heat the olive oil in a saute pan over medium heat. While you pan heats, take about 1/4 cup of the mixture at a time and make patties. If the patty doesn't hold together well, just put a little water on your hands.


Place 3 or 4 patties in the pan at a time, cooking for 4-5 minutes per side or until golden. Repeat until all cakes are cooked.


I ended up putting mine on a bun and made a sandwich out of it. I also ate one by itself. They are good either way, but I will have some toasted rolls with tomato and lettuce to go with them next time.

    These look similar to couscous cakes, which mine didn't turn out but I will have to try these!
