1 cup flour
2 Tbsp sugar
1 Tbsp baking powder
1/2 tsp salt
1 egg
1 cup milk
2 Tbsp oil

Mix flour, sugar, baking powder, and salt.

Beat eggs with milk and oil in a medium bowl with wire whisk until well blended. Add flour mixture and beat until well blended and smooth.

Ladle batter onto hot griddle or into hot skillet, using 1/4 cup of the batter for each pancake. Cook until bubbles form on top. Flip and brown the other side. Serve with fruit, whipped cream, or maple syrup.
