Mini Pizzas

These were so fun to make with Colin. Since we had the giant pepperoni, he helped me slice them down to fit on our little pizzas. I only wish the kid would eat the whole pizza and not just pick off and devour the pepperonis. It happens on almost every pizza no matter where it comes from. Sometimes I just get cheese so he can't pick them off.


Anyway, here is the easy and fun recipe.

Frozen dinner rolls (we had best results with the 100% Whole Wheat Dinner Roll recipe)
Pizza Sauce
Shredded Mozzarella Cheese
Favorite Toppings

Thaw the dinner rolls.

Preheat the oven to 400°.

Flatten the rolls by hand or with a rolling pin. Add pizza sauce and top with cheese and toppings.

Bake for about 10 minutes.

Three of these are pepperoni but I experimented with one: olive oil and basil base topped with diced tomato and onion with mozzarella cheese. Delicious!
