Colin devours these. So I froze the majority of them so I could pull them out as he wanted one. Recipe was adapted from the one on 100 Days of Real Food blog.
1 1/2 cups white whole wheat flour
1 Tbsp pumpkin pie spice
1 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
2 eggs
1/2 cup honey
1/3 cup melted butter
1 cup pumpkin puree
1/2 cup dark chocolate chips
Preheat the oven to 350 degrees. Line muffin pan with 12 liners.
Use a whisk to blend the flour, pumpkin pie spice, baking soda, baking powder, and salt. Make a well in the middle of the flour mixture and add in the eggs, honey, and melted butter. Mix until well combined. Fold in the pumpkin puree followed by the chocolate chips.
Pour the batter into the prepared muffin pan and bake 18-20 minutes or until a toothpick comes out clean.
